Keep your Eyes closed.

Try an experiment: in a crowded and noisy room, try to listen to the person in front of you, keeping your eyes open, and then keeping your eyes closed. Is there any difference ?
Of course: you get the impression to hear better.

How is this possible?
Thousands of pages have been written about this phenomenon of "enhancement"; in a nutshell, reducing the amount of multiple informations to your brain, you can "focus" more on something specific. For example, closing your eyes allows your brain to allocate fewer resources to the interpretation of what comes from sight, working in a more efficient way to the informations coming from other senses. In this case, your hearing.
Similarly happens with the sense of smell. If you are with your eyes closed and no noise around, the brain is devoted mainly to analyze the information that comes from the olfactory channel.
Therefore, you should learn -it takes time and practice- smelling with closed eyes and in a quiet room. Soon you will smell in another way, and see the difference.

Provate a fare un piccolo esperimento: in un ambiente affollato e chiassoso provate ad ascoltare la persona di fronte a voi tenendo gli occhi aperti, e poi tenendoli chiusi. C'è qualche differenza? Certamente: avete l'impressione di sentirci meglio. Come è possibile?
Sono state scritte migliaia di pagine su questo fenomeno di "affinamento sensoriale", in poche parole, riducendo la quantità di informazioni che arrivano al cervello (di solito per la maggior parte visive), è possibile "concentrarsi meglio" su qualcos'altro. Il cervello cioè riesce a destinare meno risorse all'interpretazione di quello che arriva dalla vista, e si dedica maggiormente alle informazioni che arrivano dagli altri sensi.
Similmente accade con l'olfatto. Se state annusando ad occhi chiusi e senza rumori intorno, il cervello si dedica maggiormente ad analizzare le informazioni che gli arrivano dal canale olfattivo.
Volete quindi migliorare le vostre capacità olfattive? Cominciate ad allenarvi in tal senso.
Imparate -ci vuole anche un pò di pratica- ad annusare ad occhi chiusi e in ambiente tranquillo. Ci vorrà tempo, specialmente se siete agli inizi: ma vedrete la differenza.
